Red wine poached pears

What to do with extra bottles of red wine than can be consumed?
My favorite is to do poached pears with them. Adding some herbs & spices plus rock sugar .
But sometimes the pears can get bitter, so some dried fruits helps make them better.
I like to put them in wine glasses to be served to my guests.
