Foodie#3: Eggplants cooked with Tofu and Pork :* Cà Tím Om Đậu Thịt
I. Ingredient:
- Eggplants: 3 to 4 small pcs
- Minced meat: 400gr
- Tofu: 4 pcs
- Tomato: 300gr
- Carrot: 1 pcs
- Small spring onion: 100gr
- Black pepper: 1/2 teaspoon
- Fish sauce: 2 tea spoon
- Salt, sugar: 1 tea spoon
- Flavor: 1 tea spoon
- Oil
(In Singapore I couldnt find balm-mint leaves. If you make it in Vietnam, you should add on balm-mint leaves to have special flavour for your food)
II. How to do.
- Wash your eggplant cleanly, cut it into small pcs as you want, put all in a big bowl and add on some salt to prevent it turning black.
Downloaded from internet lol - Prepare your vegetables such as carrots, tomatos, spring onion. Cut them into equally nice slices, a short part (for spring onion).
- Fry tofu by pouring oil in frying pan until its color changes to yellow. Take it out, cut it small, just nicely to eat.( you also cut it small before frying)
Tofu, spring onion, tomato, carrot - ( Main step) Use a big pot to cook. Fry eggplants with a small amount of garlic to make its smell fragant, stir until our eggplants look soft. Use another pot to fry pork with onion, fish sauce, sugar and a little black pepper. After that, mix up together (eggplants and pork).
- Add on to the mixture: carrots 1st layer, tomatos 2nd layer, and tofu 3rd layer. repeat it if you cook quite alot for your family.
Make sure everything mix together - Add some water, dont add too much. Cook it about 20 minutes to make sure everything is well-cooked.
- Finally, put some vinegar or chili if you like spicy and sour taste, turn gas off and finish by topping up spring onion on. (As the 1st photo of this post)
