๐Ÿ˜ป Easy Chicken Korma Recipe - From SCRATCH! ๐Ÿ˜ป

Salutations, curry fans! Yesterday, when I posted my Garam Masala spice mix recipe, I promised you my Chicken Korma recipe. I never go back on my word, so here it is!

There is just something so comforting and soothing about a good korma curry. It elicits memories of winter nights, cuddled up on the couch with my @morkrock , watching a good film, and just kicking back. I love the nuttiness of a korma, and the warming combination of the garam masala and the creamy yogurt are just my cup of tea.

This is a simple recipe, but it has a bit of prep time involved, so nice to do on a Sunday afternoon for a good night in.

INGREDIENTS

  • thumb sized piece of fresh ginger, peeled and thinly sliced
  • 2 garlic cloves, finely chopped or grated
  • 2 t garam masala - Make your own! The difference is immense. My recipe here
  • 1/4 t dried chilli flakes
  • 50g (1/2 cup) peanuts
  • 1.2kg chicken breast fillets, cut into 3cm pieces
  • 200g (3/4 cup) Greek-style creamy yoghurt
  • 2 T tomato paste
  • 6 cardamom pods, crushed
  • 1/4 cup vegetable oil
  • 50g butter, cubed
  • 2 brown onions, thinly sliced
  • 3 T thickened cream

METHOD

Blitz the ginger, garlic, garam masala, chilli flakes and peanuts until a rough paste is formed. Set aside

In a large bowl, combine the yoghurt, tomato paste and cardamon. Stir in the garam masala mix, and place the chicken pieces into the yoghurt marinade. Cover, and put in the fridge for at least two hours, or overnight. The acidity of the yoghurt will tenderise the chicken into its most succulent state. IMG_1562.JPG

In your pan, heat up the oil and butter on a medium heat. Fry the onion, with the finely chopped coriander lightly, until nicely caramelizedIMG_1571.JPG.

Now you can add the chicken mixture. Lightly fry for about twenty minutes, or until the chicken starts to brown. Now add the cream, and turn the heat down, and simmer for another five more minutes.

You can crush and roast your peanuts, and use them, along with coriander to garnish your curry. Serve with basmati rice and a deliciously garlicky naan bread

What a gorgeous post! Your pictures are so helpful ... and your enthusiasm for your subject comes through loud and clear. I have just begun experimenting with Indian food in my own kitchen. I love ethnic recipes and trying dishes from other cultures.

I have tried several different dishes this year, and, yes, I make my own garam masala. I'll grab your recipe before I go and give it a try! I haven't eaten often enough at Indian restaurants to know how authentic my cooking tastes, but my British husband assures me it's wonderful. (He also tells me, "I think you are totally incapable of ruining food." So I keep on feeding him. {grin} )

I've been looking for a good chicken korma / lamb korma recipe, but none I've read 'til now really sounded interesting. I look forward to trying yours. I don't post on cooking, but I dearly love to eat!! So I'll follow you ... and read your entries. You did a wonderful job on this one!
