Recipe: Chicken in water without oil
Ingredients:

  1. Chicken - 1 kg (cut into large pieces)

  2. Sour yogurt - 50 grams

  3. Round potatoes - 4 (cut in two from the middle)

  4. Tomatoes - 4 (cut into four pieces)

  5. Onion - 4 (cut into four pieces)

  6. Garlic - 4 cloves

  7. Ginger - 1 medium piece

  8. Raw Chillies - 4

  9. Dry chillies - 4

  10. Tej leaves – 4

  11. Whole cumin seeds - two pinches

  12. Cumin powder - half teaspoon

  13. Turmeric - two teaspoons

  14. Salt - to taste

  15. Lemon grass - small (small)

  16. Curry leaves - 4-5 hours

  17. Coriander leaves - 8-10 (chopped)

  18. Cinnamon, cloves, nutmeg, cardamom - 5-6 whole each

Recipe:
➤ First wash the meat well and put it with sour curd and a little cumin, turmeric and salt. Do not keep in the refrigerator or under the fan. Marinate at room temperature for 40 minutes.

➤ Peel the potatoes and cut them into two pieces.
➤ Cut each onion into four large pieces.

➤ Peel the top of the garlic and take out the cloves.

➤ Do not peel the ginger. Just cut the big piece into two pieces.

➤ Don't drop the raw curry leaves. Do not crush and keep whole.
➤ Crush all the spices cinnamon, cloves, nutmeg, cardamom lightly in a mortar. Do not use blender or grinder. Do not grind.

➤ Take a wire mesh. Put the pieces of potato and onion on it. Also keep garlic cloves, two pieces of ginger, whole raw chillies and whole dry chillies.
➤ Now reduce the flame completely in the gas oven and place its grid on the flame and roast it well. Take care not to burn it completely.

➤Then lightly grind burnt garlic cloves, ginger slices, half onion slices (remaining will be needed to make the broth, so keep them separately), burnt raw and dried chillies. Do not use a blender. Do not mix too fine.
➤ Then put the marinated chicken pieces in a pan along with salt, turmeric, whole cumin seeds and tomato pieces and cover it with a lid and keep it for five minutes.

➤ After five minutes, open the lid and you will see water coming out of the chicken. Add potato and onion pieces at this time. Add burnt garlic cloves, ginger pieces, onion pieces, burnt raw and dry chillies to the mixture that was made. Add curry leaves and bay leaves.
➤ Close the lid again and keep cooking on low flame. The water that comes out of the chicken pieces will continue to cook the meat. No need to add water separately. But one thing - sometimes the water comes out very little in desi chicken, so keep it in a little knowledge. Sometimes lift the lid and shake a little. If not, it can go down. You will understand how long to cook in this way.
➤ When it comes to the end of cooking, keep stirring it with the mixture of cinnamon, cloves, nutmeg and cardamom. After some time add roasted cumin powder. Then put the lid again and keep it for five minutes.

➤ After cooking, add lemon grass and coriander leaves on the meat without removing the pan.
➤ After two minutes take it out of the oven and mix it with hot rice and make a ladle.
