Ingredients:
• 2 hairtail fish (cutlassfish), cleaned and scaled
• 1 onion, sliced
• 3-4 garlic cloves, minced

• 4-5 shiitake mushrooms, sliced
• 2 green onions, chopped
• 2 tablespoons soy sauce
• 1 tablespoon oyster sauce
• 1 tablespoon sesame oil
• 1 tablespoon cooking oil
• Salt and pepper to taste
• Sesame seeds for garnish
• Steamed rice for serving
Instructions:

  1. Prepare the fish:
    • Make 2-3 diagonal cuts on both sides of each fish. This helps the flavors penetrate the fish during cooking.
    • Season the fish with salt and pepper, both inside and outside. Set aside.
  2. Prepare the vegetables:
    • Heat the cooking oil in a large pan or wok over medium heat.
    • Add the minced garlic and sliced onion, and stir-fry until the onion becomes translucent.
    • Add the carrots, zucchini, bell pepper, and shiitake mushrooms. Stir-fry for a few minutes until the vegetables are slightly softened.
