Healing Vegetable Stock

Ingredients:
1 large onion
4 cloves garlic, peeled
1 leek, trimmed, washed, cubed
2 tbsp olive oil
8 cups water
Half green cabbage quartered
1 stalk celery coarsely chopped
1 carrot coarsely chopped
1 whole dried cayenne pepper
1 cup coarsely chopped broccoli stems
1 bay leaf
5 whole allspice berries
5 pepper corns
1 bunch fresh thyme, alfalfa
2 sprigs fresh sage
3 astragalus, if available
1- 2 inch pieces ginger, ginseng, burdock, dandelion root

Directions:
On a backing sheet toss onion, garlic and leek with olive oil. Roast 30 to 40 minutes at 400 degrees F, stirring once until browned.
Note: The other vegetables can also be roasted for a richer flavor if you have time. Otherwise just saute the onions, garlic and leeks in the stockpot first then add the rest of the ingredients. If roasting bring the water to a boil in the stock pot then add the rest of the ingredients and reduce to a simmer.
Simmer for 45 to 90 minutes, strain the vegetables and discard or I like to take out everything and leave the cabbage, leek, celery and carrots for a hearty soup. For this I place the spices and roots in a cheesecloth bag for easy removal plus I tie my bunches of thyme and alfalfa together.

Now take that stock and make

Leek and Mushroom Pilaf

Ingredients:
1 head of garlic
2 tsp olive oil
2 tbsp butter
1 cup chopped leeks
2 cups coarsely chopped Shiitake or Maitake mushrooms
3 tbsp fresh thyme leaves
1 cup arborio rice
1/4 cup healing wine
3+ cups stock
1/2 cup freshly grated Parmesan cheese

Directions:
Slice 1/4 inch off top of garlic, leaving skin on. Place with cut side up in baking dish and drizzle with olive oil. Cover and back in a preheated oven at 375 degrees F. for 35 - 40 minutes or until golden brown and soft. Let cool.
In a large skillet cook over a medium-high heat the leeks and mushrooms in the butter for 5 minutes or until soft. Stir in the thyme and rice. cook for another 3 minutes, stirring constantly.
Stir in wine, squeese garlic into the rice mixture and cook for 2 minutes. Add stock and boil. Reduce to medium heat, cook stirring for 20 minutes or until rice is tender and mixture is creamy.
Remove from heat; stir in Parmesan cheese. Season to taste with salt and pepper and enjoy!

Baked Stuffed Turnips

Ingredients:
4 medium sized turnips peeled
1/4 cup Parmesan cheese
1/4 cup mushrooms -- chopped fine
1/4 cup kale leaves chopped
1 clove garlic minced
1/2 teaspoon onion powder
salt and pepper -- to taste
2 tablespoons butter melted

Directions:
In a saucepan, boil whole turnips for 30 minutes or until soft enough to easily scoop. You can cook them in your stock for some extra goodness.
Take the turnips out of the pot and let them cool enough to handle.
Preheat oven to 375F. Carefully scoop out the center of each turnip, being careful not to go through the sides or bottom.
Put what you took out of the turnips into a food processor, and lightly process until to small pieces (or chop by hand very fine).
Add to a mixing bowl along with the rest of the ingredients, except the butter. Mix together well and fill each turnip. Drizzle melted butter over each turnip.
Bake 30 to 40 minutes or until lightly browned on top.

Medicinal Qualities

Garlic

anti-microbial, antibiotic, anti-carcinogen, expectorant, digestive stimulant, diuretic, antiparasitic

Thyme

antioxidant, expectorant,antiseptic,tonic,soothes coughs

Mushrooms

Shiitake - Strengthens the immune system which increases the bodies resistance to bacterial, viral, fungal and parasitic infections. They are also beneficial for soothing bronchial inflammation.
Maitake - has a tonic effect on the immune system and is used in the prevention of colorectal cancer. they also help protect against constipation.

Cruciferous Vegetables - Cabbage, Broccoli, Kale

antioxidant, anti-inflammatory, used to protect against inflammatory bowel disease

Turnips

Tonic, decongestant, bactericidal and diuretic.

Sage

anti-microbial, antibiotic, antioxidant, anti-inflammatory

Burdock root

diuretic, antioxidant, reducing inflammation,used for gastrointestinal complaints

Dandelion root

used as a laxative to increase bowel movement and as a digestive tonic
