Chicken Salad

Ingredients:
2 skin-on chicken drumsticks
1 tablespoon soy sauce
1/2 tablespoons brown sugar
1 tablespoons cooking wine
1 tablespoons hot chilli oil
1 tablespoon sesame oil
½ peppercorn oil
4-5 peppercorns
1/3 thumb ginger, sliced
2 cloves garlic, finely chopped
2 scallions, 1 thinly sliced and 1 cut into 1 inch long
Roasted peanuts, finely chopped
Directions:
Clean the chicken. Put sliced ginger, peppercorns and scallions (1 inch length) and chicken in a soup pot and cover with cold water.
Turn on the heat to bring to a boil. Then lower the heat to the medium-low and cover the pot and cook about 8 min.
Remove the chicken to a big plate. After chicken cools down, bone and skin the chicken and slice the chicken with hand.
Prepare sauce: in a bowl, put soy sauce, sesame oil, peppercorn oil, hot chilli oil, finely chopped garlic, sugar and mix.
Place the sauce onto the chicken and finally sprinkle scallions and peanuts on the top and serve.
