Homemade gluten-free tortillas

I love to cook quickly and above all HEALTHILY!
So, for today's dinner:

Homemade gluten-free tortillas

For me, the vegetarian version. Of course, you can add fried minced meat or
chicken pieces.

Gluten-free and vegan pancakes - ingredients:

Unroasted buckwheat (any quantity, depending on the number of consumers, it
must be soaked the previous day).
A little oil for frying (up to the first pancake) - good for high
temperatures.

Vegan stuffing for pancakes - ingredients:

Fresh spinach (minimum half a large package),
Red beans (previously cooked or from a can, about 250 g cooked)
1 onion
3 cloves of garlic
A few teaspoons of tomato puree
favorite herbs and spices: salt, thyme, fenugreek, some kind of Mexican
combination of herbs (I just did not have anything Mexican, but it came out
deliciously)
A bit of cooking oil - good for high temperatures.

Preparation of pancakes:

Cover buckwheat with water (room temperature) and let soak overnight. The
next day, pour the water and rinse the buckwheat thoroughly in a large
sieve. Grind groats with fresh water.

The consistency of the dough should be similar to pancake batter. I prefer
more water, because then the pancakes come out thinner.

After thoroughly blending the buckwheat and water, fry the pancakes in a
well-warmed pan, slightly greased with oil. For me, the oil was used only
for the first pancake.

I am not the author of this recipe. Buckwheat pancakes have been flying
around on the Internet for some time now, but I thought that not all of you
know this option, so I pass on the good news that has been very well
received in my minimalist kitchen.

Preparation of stuffing:

Fry the pancakes and quickly prepare the stuffing.

Stew the onion with a little fat and water, then add the spinach, mixing it
all together. Finally, add the garlic, cooked beans, concentrate, herbs and
spices, pressed in a press, reducing everything so that it is not too
watery.

This is how I prepared our homemade buckwheat tortillas, adding fresh
cucumber and olives, but of course you can add whatever you want.
