Another delicious concoction! Love the idea of making a vegan paella. I never liked seafood even before I stopped eating meat, so this is right up my alley anyway. :)
I stopped eating meat and dairy products but the seafood is harder for me. But this recipe makes me forget because it is really delicious and thanks to the texture and spices we do not realize that there is no seafood =) I advise you to try it! ^-^
