How To: Perfect Baked Sweet Potatoes

I've said it before and I'll say it again: sweet potatoes are the perfect, versatile food staple. The key to making a perfect baked sweet potato is patience. Patience and coconut oil. A light layer of coconut oil on the skin of the potato imbues it with the perfect flavor and texture, making the skin of the potato just so delectable as the inside.

As for the patience...it is almost impossible to not await the sweet potatoes with a drooling mouth. In the hour plus that it takes them to bake, your house will fill with a delightful autumnal aroma.

Ingredients:

  • sweet potato
  • 1 teaspoon of coconut oil
  • 1/2 tablespoon maple syrup or honey
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon
  • 1 dash of ground clove

  1. Preheat oven to 450℉. Lightly coat sweet potato with coconut oil. Wrap sweet potato in aluminum foil.
  2. Place in oven and bake for 1 hour and 10 minutes. Sweet potatoes should be soft to the (mittened) touch when ready to be removed from oven.
  3. Remove sweet potato from oven and cut a slit lengthwise on top of potato and squeeze gently at both ends to open up sweet potato.
  4. Place butter, cinnamon, honey (or maple syrup), and clove on sweet potato, mash with a fork to fully incorporate flavor into the sweet potato.

  5. Serve warm.
