Nigerian street food Roasted yam
Hello friends, @perkyyoung I traveled to One of the states in Nigeria (Enugu state) this holiday and one of the food I enjoyed most there is Roasted yam, I asked some questions about how it's been made, of which I got my answers and I did like to share it with you. So you can also enjoy this wonderful meal.
Roasted yam is one of the most popular street foods in Nigeria.
It is prepared with the white yam, with brown back.
It is very delicious and nutritious also.
**ingredients used in making roasted yam **
1 white yam (700g)
2 1 habanero pepper
3 1 medium onion
4 A handful of ukpaka (sliced oil bean seeds)
5 Salt to taste.
Direction for preparations
1 Peel off the back of the yams and cut it into 1 inch thick pieces.
2 Wash and soak the yam pieces in Salt water overnight.
3 Before you roast the yams, cut the onions into tiny pieces
**Roasting Directions **
1 Pour out the water used in soaking the yam pieces
2 Add some salt and toss to distribute evenly.
3 Place the yam pieces flat on the oven rack set the oven to grill (broil) and roast at 150°C (300F) till the top side of the yam are light brown
4 You can turn the yam pieces to roast the underside too, till they are light brown all over.
5 When the yams are almost done, you can increase the temperature to 180°C (330F) so that the outside of the yam pieces will be very crunchy.
6 You can roast one side for 10mins, turn and roast the other side for 10mins also.
7 They are done when inside of the yams are moist.
**Make the pepper sauce. **
1 While the yams are roasting in the oven, pounds the pepper diced onions and ukpaka in a mortar till a smooth blend is achieved.
You can also use any food processor that will allow you blend ingredients without adding water.
2 When smooth transfer to a bowl and add salt and palm oil stir well and the pepper sauce is ready .
You can also add smoked fish to the pepper sauce.
When your roasted yam is ready, to eat dip the pieces of roasted yam in the pepper sauce and chew. Enjoy your delicious roasted yam.
