- Spinach
- Peppers
- Onion
- Tomato

- Cook the spinach for 5-7 minutes and also add the tomatoes in boiling water so that they can be peeled for about 2 minutes.
- In a frying pan with extra virgin olive oil put the potatoes cut into squares and let them cook, stirring from time to time so that they do not stick.
- Then add the onion and peppers, cover with the lid and cook 5 minutes more.
- Change the frying pan to remove the excess oil and add the cooked spinach and crushed tomato, stir and cook for 2 or 3 minutes and add the corn.
- To give it a final touch I added a little goat cheese I had in the fridge and waited for the heat to melt a little.

Looks fantastic potato recipe. I use julienne peelers for peeling potatoes. I'm going to try this on the weekend. Thank you
