RECIPE - "Vegetarian lentils with coconut milk and ginger"
- Red lentils
- 1 glass of coconut milk
- 1 glass of water
- Red pepper
- Green pepper
- Onion
- Tomato
- Carrot
- Garlic
- Ginger
- Lemon
- Thyme and cumin (1 tablespoon)
- Put the garlic and ginger in a frying pan with oil over a low heat for 5 minutes.
- Add the other chopped vegetables, except the tomato, and cook for 10 more minutes.
- Crush the tomato and add it and let it cook for 5 more minutes. add the lentils, the water and the coconut milk and let it cook between 15-20 minutes.
- Finally add the lemon, tomilo and cumin and let stand 5 minutes and our plate is ready to eat!
