RECIPE - "Homemade pistachio ice cream"
- 200gr raw cashew nuts soaked for at least 4 hours.
- 100 gr of peeled pistachio
- 1 can coconut milk
- 2 tablespoons coconut oil
- 150 ml honey
- 1 pinch vanilla essence
- Put all the ingredients except the pistachios in the glass of the mixer and beat until you get a creamy and smooth mixture.
- Take 75gr of the pistachios and add them to the mixture and beat again.
- In a glass taper that closes hermetically put the mixture and keep in the freezer. Every 30 minutes we have to remove it and beat with rods so that ice does not form. And we will do this 3 or 4 times.
- The last time we move with the rods, add the remaining 25gr of pistachios and leave in the freezer 2 hours minimum.
- To consume, we must take it out and leave it at room temperature 15 minutes to get the perfect texture, and enjoy!
