Hey, everybody. How are you? This time I had a craving to eat Mexican, so I decided to make a kind of empanadilla, with curry and other ingredients. I couldn't get rid of the craving, because more than Mexican, there was an empanadilla like @pepiflowers, but it was still delicious. Do you want to know how I made it?
Cut all the vegetables and put them in the frying pan with oil and salt for 5 minutes and the lid on.
Then add the textured soybeans, spices to taste and water and cover again and cook another 10-15 minutes until the water is consumed.
Add the curry sauce and cook 5 more minutes.
Then fill the puff pastry with the mixture and bake for 35-40 minutes.
We can put a little cheese on top to make it better, but this is left to the decision of each. I hope you liked it, a big hug.
