Cinnamon Rolls and Casserole

Stopping by to share recent results from an old baking recipe and a new baking recipe.

I suppose the first one, the old one, is a cooking and baking recipe. It is the Green Bean Casserole recipe from Minimalist Baker. The first time I made it was in 2015 and I usually make it a few times a year, although I think I might only made it once in 2019.


The first time I had green bean casserole was in 2012 when I was staying with a friend in Portland for a few days. It sounded gross, but she made it and I got instantly hooked. After going vegan the following year, I thought I would never have it again since cream of mushroom soup has dairy in it. A couple years in and I couldn't stand it anymore, so I decided to bite the bullet and make it from scratch (I aversion to cooking was even stronger back then).



I use a teensy bit more fried onions than the recipe suggests

It used to take me a REALLY long time to make it (as in, at least three times the total 30 minutes stated on the recipe), mostly from the cutting of the vegetables. I still cant get it done in 30 minutes like the recipe says, but it goes MUCH faster since buying a vegetable chopper a couple years back.


I didn't understand the concept of comfort food until I ate a whole one of these in one night.


The new recipe I tried was one from It Doesn't Taste Like Chicken, a vegan recipe page I recently found. The title "Easy Vegan Cinnamon Rolls" was too tempting to resist, because I love easy cinnamon rolls. Usually the ones I eat come from a pop out can with a bunny on it, which generates paper, plastic, and metal waste that can't be recycled.


Cutting the rolls from the log of pastry was the most fun part heh

I cut the recipe in half to make these. I didn't take any progress pictures, though I wish I did because it was my first time using the rabbit theme pastry bowl my mom got me for Christmas (now known as my Watership Down bowl).

I had no idea how they would come out, and was not holding my breath, but they came out OK!

After icing them and eating one, I decided to make more icing because the first batch did not cover them well enough. Part of that reason, I realized, was because I accidentally left out the vanilla which would have thinned it a little bit more. I didn't end up taking a photo after I added the rest of the icing, but trust that they were very, very gooey after my second pass.


I made some more yesterday and am going to eat one before work. Nap first, then cinnamon roll, then work. Thanks for reading, and let me know if you try these recipes, or have some easy vegan recipes of your own you would like to share with me :)
