NIGERIAN MEAl; AGIDI

Today, I would be writing about the Nigerian meal called Agidi or also known as Eko.

Agidi is not common to any particular Nigerian group as it is eaten by both almost ethnic groups. The meal is gotten from cornflour,commonly known as Akamu. There are two forms of this agidi, the white and the jollof. For this post, I'd be writing on The jollof. its constituents, method of preparation and its health benefits.
Agidi jollof is most times eaten as a snack, but it can also serve as a light dinner or lunch.
INGREDIENTS
- Broad leaves to wrap it, either Uma leaves or plantain leaves
- Sliced/minced meat
- Akamu/Corn starch
- Peper /tatashe
- Seasoning cube
- vegetable oil
- Fresh tomatoes
- onion
- Salt to taste
PROCEDURE
wash the tomatoes, then blend it with the pepper and onions. The number depends on size you intend cooking.
Follow the necessary procedures to preparing stew, then add the diced meat.
disolve the pap/akamu/corn starch in cold water to make a paste.
Add the stew to paste or the reverse and stir till you get desired color.

Increase Your burner to allow the mixture thicken
After thickening, turn of the burner and allow to cool.
now here is where we use the Uma/plantain leaves. Scoop the mixture into washed leaves, wrap it up and allow to cool.

HEALTH BENEFITS
- This meal is 100% natural, there is no artificial additive. We know how our body needs natural food.
- Corn as we all know is a very good source of carbohydrate. It's provides adequate carbohydrate neededfor our body.
- Agidi has a high potassium content, making it a good meal for those having high blood pressure. It tends to reduce the blood pressure and maintain healthy heart.
- With regards to pregnancy, agidi helps nursing mothers increase their breast milk flow. It is a highly recommended meal for nursing women.
- Children should not be left out of agidi consumption. This is because of its rich vitamin and minerals content. Riboflavin, thiamine, pantothenic acid,potassium, panthothenic acid, zinc selenium, and calcium are all present. They are all needed for healthy growth.
