How to make my world class Banana Pancakes

Yes that's right, I'm gonna show you how to make my famous banana pancakes!!! They work great after sleep overs ;) or if you just want to start off your day the right way.

If you will be following my blog you'll see I like easy, yummy, fun food. This is a classic one in that sense. So let's get to it. First off, put one your cooking tunes, if you don't have cooking tunes here is the perfect one to make this recipe to:

Okay once we have the tunes going it's time for ingredients. Like I said, simple does it. This recipe is per pancake so if you want more than one just times the ingredients by the number of pancakes.

Ingredients:

1 Egg
1 Ripe Banana (The riper the better)
Pinch of salt
Pinch of thyme
2 Level table spoons of all purpose flour

Optional:

Baking powder
Splash of cream
2 Pieces of Bacon
2 Teaspoons of strawberry jam
2 Fresh sprigs of thyme

Step 1

Peel you banana and break in two. Put it into a bowl and then proceed to mash with a fork.

Step 2

Break the egg into the mashed banana and mix thoroughly. Add a pinch of salt and thyme (If you are using fresh thyme use a bit more than a pinch.) Mix it thoroughly and then add a splash of cream (Optional, also the amount of cream is personal preference, I add about 75ml) and mix through.

You can add baking powder with the salt and thyme to make your pancake a but fluffier but I like mine without. Half a teaspoon should be adequate.

Step 3

Now you will need a pan and a spatula. Put some butter into the pan. (You can also use oil/margarine or spray oil, but I prefer butter for that rich taste.) Start your pan of on the highest heat until your butter has melted and add your banana mixture. Using your fork spread your mixture to the size of the pan.

Step 4

After spreading your mixture I generally, reduce the heat to medium/low and put the lid on just to speed up the cooking and to keep all the moisture inside, you can cook it without it though. After about a minute or two your pancake should be beautifully brown on the bottom. Give the pan a shake to see that the bottom is loose and crispy. Then use the spatula to flip it around and return the lid for one more minute and then serve.

Step 5 (Optional)

It's always fun to add some extra flavour, if you are a sweet tooth maybe add some maple/golden syrup. If its a hot day some ice cream and fruit. My personal favourite is a sweet savory mixture. Take two pieces of bacon and two teaspoons of strawberry jam. Add to the pan on high heat, remember to constantly stir as the sugar in the jam can cause it to burn easily. Put the cooked bacon in the middle of the pancake and add some fresh sprigs of thyme for flavour and appearance. There you go, easy quick, delicious banana pancakes that will make your day!!!!
