Good day everybody, One of my favourite food is cakes so I decided to ask a friend who stays in Philadelphia. U.S.A on how to make a cheese cake. Here was a way she told me to do it.

125g digestive biscuits, 50g butter; half teaspoon cinnamon; 1/2 teaspoon nutmeg; 450g cream cheese,. 125g caster sugar; 2 eggs; 1 teaspoon vaniHa essence,. Topping: 60g caster sugar; 150ml soured cream; a few drops vanilla essence.

Pre-heat the oven to 200°C (400°F). Crush the biscuits using a rolling pin, or put in the blender. Melt the butter in a saucepan, stir in the biscuits and spices. Grease the bottom and sides of a 20cm loose-bottomed cake fin. Press this biscuit crumb mixture evenly over the base. Bake for not more than 10 minutes or unto brown and crisp.
Cream together the cheese and sugar in a large bowl using a wooden spoon. Add the eggs one at a time, and the vanilla essence.

Beat until smooth. Pour over the biscuit crumb base and bake at 190°C (375°F) for about 40 minutes or until it is set. Remove from the oven and slip the point of a sharp knife around the edge to loosen. Allow to cool, Meanwhile whisk the sugar, soured cream and vanilla together until the sugar has dissolved.

Pour it over the cheesecake (still in its fin) and allow to set. Unmould to serve.
