This is how i cook "Pork Nilaga" (Boiled Pork Soup)

Nilagang baboy or "Boiled Pork Soup" in English, is a cheap and easy recipe that may be a reason it is one of the very common dishes in the Philippines. It is best served with plain rice and spicy fish sauce.

The traditional way of cooking Pork nilaga is by sautéing the onion with peppercorn and pork followed by boiling into water and broth to make it tender, then adding potatoes and putting the cabbage or chinese cabbage as the finishing touch. But since i grew up with it, i improvised.

Here's how i cook Pork Nilaga

Serves 4 persons
Preparation time: 2-5mins
Cooking time: 45-60mins.
Total time: 47mins- 1hr and 5mins.

Ingredients:

-1/2 lb or 1/4 kg cubed pork
-quartered medium sized cabbage
-medium sized yellow onion, (i divided it to half but you can make it whole)

  • 1/2 sweetcorn, sliced crosswise
  • 1 medium sized taro, sliced narrowly crosswise
  • 1 or 2 potatoes, cubed
  • 1 ripe saba banana, sliced crosswise
  • 1 cup pork broth (you can also use a beef broth but i used pork)
  • 2 teaspoons of oil
  • 6 cups of water
  • salt to taste

Compared to the original recipe, i added corn, then i minimized the quantity of the saba banana so that the sweetness is equal. I also added taro to add a little bit of thickness to the soup. I removed peppercorn to the recipe because i am serving it with wild chili and a fish sauce.

Instructions:
  1. Heat the cooking oil in a deep pot.
  2. Saute the onion for at least 20 seconds
  3. Put in the pork and cook until it is light brown for about 3-5mins.
  4. Pour in the broth, taro, and sweetcorn and add 6 cups of water. Boil for 45-60 minutes or until the pork becomes tender. Remove undissolved taro.
  5. Add the saba banana and the potatoes. Stir and cook for 12 minutes.
  6. Put the cabbage and add salt. (quantity of salt depends on your taste but i just added 1 teaspoon) cover and continue to cook in 3 minutes.
  7. Transfer to a serving bowl with a spicy fish sauce and plain rice and enjoy!
