The variety and layers of beets bring a beautiful dimension to the dish. So many different delectable textures come into play. Love the addition of brown butter to lend a toasty and nutty flavor that works well with the beets. Then there’s the fish sauce to bring in the umami factor.

Thanks @offoodandart! I usually do this brown butter sauce with soy sauce but changed it to fish sauce since it has a stronger flavor.
