Pickled Radish
Beautiful Pickled Radishes
Start with thinly sliced fresh radishes.
Try watermelon or black radishes for a different texture and color profile.
Make the pickling mixture. Cool. Pour over the sliced radishes.
Chill! You're done.
Try it with black radishes.
Pickled Radishes Recipe
Ingredients
1 cup radishes, sliced thin
1/2 cup water
1/2 cup rice vinegar
1/2 cup sugar
3/4 teaspoon salt
black peppercorns, optional
crushed red pepper, optional
Directions
- Put sliced radishes in a mason jar.
- Combine water, rice vinegar, sugar, salt and spices in a saucepan.
- Cook on medium heat until sugar dissolves.
- Turn heat off and cool mixture for ~45 minutes. You don't want the mixture to be hot as it will cook the radishes.
- Pour cooled down pickling mixture over radishes.
- Chill in refrigerator for at least 8 hours.
Pickled radishes will keep for 7 - 10 days in the fridge.
Note: Radishes have a very pungent aroma.
