For Cook with Us #2, we had Three-Ingredient Dish as the theme. This has inspired me to look up recipes from a previous gourmet club dinner with the same theme. One of them is Halibut en Papillote, or halibut wrapped in paper. The halibut steams inside the paper and cooks to a nice, tender and light flaky texture.
Below are the three ingredients: halibut, orange and garlic. There are free ingredients as you can see in the photo above. They are the seasonings and the olive oil. I've also used thyme for garnish.
Lay the halibut on parchment paper big enough to wrap the halibut in.
Season halibut with salt. In a small bowl, combine pepper, garlic and olive oil. Spread the mixture on top of the halibut pieces.
Top the halibut with orange slices and a sprig of thyme.
Fold the parchment paper over the halibut and make small folds from one end and around the halibut to encase it in a half moon pouch.
These are now ready to be baked in a 400oF oven for 10 - 12 minutes. The cooking time will vary depending on the thickness of the halibut.
Voila! Here's the finished product with a side of salad greens.

Those are the juiciest looking slices of oranges I have ever seen. I like all the flavor combinations and your ingredients look so fresh. Nice and healthy!
Thank you @loveself! To be honest, I had to be careful with that one orange as that was all I had at the time. I tasted the end slices and found them so juicy and sweet that I had to make sure I didn't eat the rest of the slices so I'd have enough for the halibut. =D
This dish looks healthy! Umm! I have to start to create some healthy food too, Thai food tastes sweet, salty and sour etc. I have to learn more about cooking healthy food! ;)
But that's why Thai food is deliciou and I am so enjoying your Thai food posts! Reminds me of all the flavors I grew up with and miss dearly. Philippine food is the same ... not so healthy! But delicious as well.

What a light and flavorful dish! The delicate seasoning with garlic, orange and thyme really let the halibut shine in this dish.
