Here's a simple recipe for fluffy and delicious Pamkin pancakes)

1/4 cup | pumpkin puree |

1 teaspoon | baking powder |
1/2 teaspoon | baking soda |
1/2 teaspoon | ground cinnamon |

1/4 teaspoon | salt |
1 cup | buttermilk (or 1 cup milk mixed with 1 tablespoon vinegar) |
1 | large egg |
2 tablespoons | melted butter |
1/2 teaspoon | vanilla extract |
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, whisk together the pumpkin puree, buttermilk, egg, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few lumps are okay.
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
Repeat with the remaining batter, adding more butter or cooking spray to the skillet as needed.
Serve the Pamkin pancakes warm with your favorite toppings, such as maple syrup, whipped cream, or chopped nuts.
