Low budget (vegan) lunch idea under 1 Dollar

Living in Amsterdam is not cheap. Therefore, I am always looking for ways to save money. And although I am a great fan of cooking, food is often the place where I cut my spendings. To keep it fun, I challenge myself to create enjoyable and healthy meals as cheap as possible! I want to share with you todays lunch.

The prices are based on my local food store store!
Just cut the spring onion, cook the veggies in the vegetable stock and add the noodles at the end. Almost as easy as it can get!

Love that you're providing vegan meals on a budget! I think we've all had to cut corners on food, because the reality is that eating healthy can get pretty damn expensive. Great post! Keep em coming :D
