How to make Cherry Clafoutis (Baked French Dessert)

There is no better way of celebrating the rich, dark beauty of fresh cherries than in a simple clafoutis!

G'Day my fellow Steemies, I hope you're all doing well. 😀

Todays recipe is a pastry-less flan studded with fruit that is served hot from the oven, it is one of the easiest French desserts you'll ever make and one of the most tastiest. There is some interesting science to this recipe - the Cherries! Now most people will pip the cherries to remove the stone, I leave it in...reason being when baked the cherry stone releases a natural almond aroma through the flan. It does make it a little harder to eat sure and you'll have people spitting out the seeds during a meal but I find it part of the theatre of the dessert and to me more authentic. I will give you the stone-less option too!

Onto the recipe!

Ingredients:

1 cup whole milk
3 eggs
1/2 cup sugar
1 teaspoon vanilla extract
2 tablespoons butter, melted
1/2 cup all-purpose flour
Enough Cherries or desired fruit to fill your pie dish (I used about 60).

Step1 Preheat oven to 180C or 350F. Grease and sugar a shallow 8-cup (2L) ovenproof pie dish. Arrange the cherries in a single layer over the base of the dish.

Step 2 Place the combined flour and sugar in a large bowl. Stir to combine. Add the milk, vanilla and egg yolks and whisk to combine.

Step 3 Pour over the cherry mixture and bake for 45-50 mins or until golden brown and just set.

You can use any stone fruits that are in season with this batter

It's much easier to put the fruit in first then pour the batter over the top and let it travel the valleys on the cherry

Serve with really good vanilla bean ice cream, dust with icing sugar or like me - just have it the way it is!

Watch out for those seeds, make sure you tell you guests to expect them before they send you the dentist bill.
