Cold busting squash and red pepper soup!

Something we love in our house is soup! This one is so easy and also really great for easing colds!

Squash and red pepper cold busting soup!
Makes a 5L pot worth!

1 large butternut squash
4 carrots
3 red bell peppers
1 large onion
2 garlic cloves
300g sweet potatoes
Veggy stock to 'just' cover the vegetables

add a generous sprinkling of fresh thyme and half a tablespoon of fresh ginger for added comfort for cold symptoms.
Peel and chop everything up, chuck in a casserole pot with a little oil, fry up for a few minutes and then add the Veg stock to just cover the veg. Bring to boil and then cover and simmer for around 50 minutes, or until soft and cooked through. Whizz with a hand held blender (or however else you would make a smooth soup)
Serve with crusty bread and lashings of Vegan spread!! Just the Red peppers contain almost 300 percent of your daily vitamin C intake!! Besides being a powerful antioxidant and having a tonne of other vitamins and minerals. Guaranteed to boost you up.
