Spinach and Mint Salad with Strawberries and Feta in Balsamic Vinaigrette

Fresh mint leaves and chopped parsley give this salad a wonderful aroma and flavour; while the sliced strawberries add a nice colour and sweetness. The crumbled feta and a balsamic vinaigrette dressing add a finishing touch to this very addictive and delicious salad.

Spinach and Mint Salad with Strawberries and Feta in Balsamic Vinaigrette

Ingredients --- Makes: 4 servings
~dressing~
3/4 cup olive oil
1/4 balsamic vinegar
2 Tbsp honey, liquid
1 garlic clove, minced
sea salt and black pepper to taste
~salad~
3 cups baby spinach
1 cup packed mint leaves, separated
1/4 cup fresh parsley and basil, de-stemmed and chopped
1/2 cup quartered strawberries or sliced
3 oz. goat cheese or feta cheese, crumble

Instructions
Make the dressing. Combine the "dressing" ingredients into a small mason jar with a sealable lid, and shake until well mixed. Sample the dressing and adjust the ingredients to taste.

Balsamic Salad Dressing stores well in the fridge for a couple weeks. The vinegar and oil will separate after only a few minutes, thus give the jar a shake before using.

Make the salad. Clean and pat dry the spinach, herbs and strawberries. De-stem the herbs and slice the strawberries. In a large salad bowl add the spinach, mixed herbs, and strawberries; then gently toss to combine.

Serve tossed salad with crumbled goat cheese or feta and the balsamic vinaigrette dressing. Enjoy.
