Mashed peas with candied lemon
Spring is here ? Quick, cook peas! The season of peas is very short so when they arrive, we eat 2 or 3 times a week: in soups, salads , tabbouleh , or even couscous ! The pea is richer in carbohydrate and therefore more caloric than a normal vegetable. When it is fresh, it is considered a vegetable when it falls into the category of starchy foods once dried (split peas). To shell them, you can try to ask for help from your children (for the moment it is an activity for which my 2-year-old daughter excels!).
For the Odelices magazine of the spring of 2017 , I made vegan puree with peas, cream of millet and candied lemon. I share with you this recipe which I look at a delicious memory.
Mashed peas with candied lemon
For 4 people
Preparation: 3 min
Cooking: 10 minutes
Difficulty: Very easy
ingredients
650 g of shelled peas
½ lemon confit
20 cl of Millet Cuisine SOY ( millet cream )
Preparation
- Cook the peas in a pot of boiling water for 10 minutes. Drain them. 2. Cut the half candied lemon into small cubes. 3. Mix the peas finely with the Millet Cuisine and the candied lemon. Salt and pepper if necessary.
