Giving Up Meat for Lent

I mentioned in a previous post that Mini Me 1 has given up meat for Lent and so has my husband (although he still eats fish regularly). This has lead to me becoming a pescatarian myself!

Delicious Indian Veggie Food

I mostly just eat veggie during the week. Most of the veggie foods I eat at home are Indian dishes as I find that there are so many delicious veggie Indian recipes.

Getting Enough Protein

To get enough protein I make sure I make lots of daals (lentils), channay (chickpeas) and paneer (an Indian soft cheese). I also make lots of vegetable dishes. My mum recently came to stay with us and introduced me to sprouted mung daal. It’s now become part of my staple diet! It’s full of protein and fibre and is cheap and easy to make. Here is a step by guide on how to sprout mung beans at home.

How to sprout mung beans at home

Take a large cupful of mung beans. Pick through the mung beans to er, check they all look like mung beans! Wash in water 3 or 4 times then cover with water and leave to soak overnight.

The next day drain almost all of the water. The mung beans will look slightly puffy at this point.

Now cover the bowl with a damp cloth and leave for another 24 hours.

According to my mum you must not even peep at the mung beans during this time! Of course I did (sorry Mum!) and they still turned out fine. By this point your mung beans will have sprouted beautifully! If you want longer sprouts you can leave them an extra day. You can also put them in the fridge for a day or two if you don’t want to use them straight away.

As you can see Mini Me 2 was pretty excited about this miracle of making mung beans grow sprouts!

Now you can eat the sprouted mung beans raw and sprinkle onto salads or cook it with spices to eat with roti, rice or quinoa (this is what I prefer to eat mine with). I will be posting up a recipe for sprouted mung daal very soon! Meanwhile get your sprout game on! Your tummy will thank you for it!

Great tutorial! I usually sprout using quart jars turned on their sides, but with a large family, need a way of sprouting more. I'd never heard of the bowl & damp towel method. I'll be trying that. Thanks!

Hi @crowbarmama thanks for reading! Yes try this method, it works well. Some people I know have bought sprouters but there is really no need for that.
Sprouted beans are great aren’t they? :)

My daughter has crazy allergies & intolerances so even lentils are hard on her digestive tract. By sprouting before cooking she is able to tolerate them. So yes! We're big fans of sprouted beans!

It must be challenging finding meals that all of you can eat. It’s good she can eat sprouted lentils.
