Vegan Split Pea Soup Recipe that I've been wanting for the last week, is making the whole outside of our casita smell sooooo GOOD!
We usually cook outside because it gets so hot here, to cook inside would make our Casita a sauna! Our meals are usually one pot wonders, which boost simplicity and clean-up....lol.! Today we made Split Pea Soup for dinner and it was so incredibly delicious! It's a very simple and cheap recipe. This is a classic Soup that has stood the test of time.
As a child growing up in California, my family would often go to the famous Andersen's Split Pea Soup restaurant. Now as an adult I have been able to take my family their twice and it always brings back fond memories and nostalgic feelings. It is located in Buellton, California so every time we are heading north to Washington to visit family we usually make a stop there. The Split Pea Soup comes in a vegan option and it is truly amazing on the taste buds!
Our dinner tonight was our variation of Split Pea Soup, which consisted of what we had on hand. It fed 8 VERY HUNGRY VEGANS!
- 2 bags dry peas
- Vegetable Stock
- 1 small bag of multi colored carrots
- 1 stalk of celery, thinly sliced
- 1 large purple onion, diced
- 3 cloves of garlic, roughly chopped
- Salt and Pepper
🔅Add all of the ingredients into a large stock pot.
🔅Add 5 cups of water and stir.
🔅Place the covered stock pot to boil on medium to high heat. Once the Soup is bubbling lower the burner to medium low.
🔅Allow the Soup to cook until the peas have SPLIT! You will know when this has happened because the consistency become mushy like a purée or smoothie.
🔅Make sure to stir the soup from the bottom of the pot, so as not to burn it. It will get pretty thick.
🔅We enjoyed our Split Pea Soup with a slice of crusty bread. The kids enjoy dipping, so this is a very healthy, nutrient packed, kid friendly meal.
Peas are packed with vitamins and minerals. They have 18 nutrients and in just one cup of peas there is 40% vitamin K. They are also very low in fat while still providing a substantial amount of Omega-3's. 120 milligrams to be exact. Peas contain health protecting phytonutrients. A polyphenol called coumestrol has recently come to the forefront as protection from stomach cancer. They have antioxidant and anti inflammatory benefits as well. They are sweet and starchy providing lasting CLEAN energy for the body!
Consider planting Peas in your gardens! They are very environmentally friendly because they add nitrogen to the soil, without adding any fertilizer. The roots also break down very easily and it has been proven to lower the risk of pest problems.
