RECIPE: Vegan Pate with Zucchini and Millet 🥒🥒🥒

Hello Dear Steemit Friends!

Can the pate be vegetarian or even vegan? Yes of course! 

Have you ever eaten such a pate without meat? If not, I have a recipe for zucchini and millet pate for you. It tastes delicious with a slice of rye bread! 

You can put the baked pâté into a jar and store it in the fridge for a few days.

Ingredients:

  • 3/4 cup of millet (before cooking)
  • 3 glasses of zucchini grated with a peel (1/2 large zucchini)
  • 2 carrots
  • 1 large onion
  • 3 cloves of garlic
  • a few dried tomatoes
  • 3 tablespoons of olive oil
  • 2 tablespoons of refined coconut oil
  • a tablespoon of curry powder
  • a teaspoon of turmeric
  • 1/2 teaspoon of hot pepper
  • a teaspoon of pepper
  • a teaspoon of Himalayan salt
  • a handful of chopped parsley

Preparation:

1. Boil the millet:

Pour the millet into a pot and roast for a few minutes while stirring. Then rinse with water. Pour the water, add salt and turmeric, boil. Reduce heat to low and let simmer for 20 minutes under cover (without stirring), until the millet absorb all the liquid. Leave under cover for a cooling.

2. Prepare vegetables:  

Grate zucchini and carrots. Squeeze the juice out of them. Cut the onions, garlic and dried tomatoes into small pieces. Fry in olive oil until the onion is golden. 

 3. Prepare a pate:  

Put the cooled millet into a large bowl and mix it using a hand blender so that it becomes sticky.  

Add vegetables with olive oil, coconut oil, parsley, spices and stir well. 

Put the pate dough into a baking tray and bake 1 hour in 200 C.

Leave the baked pate to cool and store in a fridge.

Sounds easy with a lot of healthy spices, I love tumeric and pepper, I also heard ther together act as a strong antioxydant. Another recipe for my book :)

Vegan Pate! Never really liked the original thing, I'm sure this better!
