Healthy Recipe: Chocolate Bar with Buckwheat and Goji Berries 🍫 VEGAN & GLUTEN FREE !!!

Hello everyone! Who wants a chocolate today? ...but who wants chocolate with buckwheat? 😉😋 

Chocolate bar with buckwheat can be an idea for a second breakfast, snack or a healthy dessert. 

The most important is the selection of chocolate, which we will use to prepare the bars. The rule is one: check the ingredients before buying it, remembering that manufacturers exchange the ingredients in order from the largest amount to the smallest. Pay attention to what percentage of chocolate is cocoa, I recommend it in which it is min. 70% - 90%. It is known, the more cocoa, the less sugar and other additives.  
You can also find chocolate without sugar, it is replaced by stevia, xylitol or erythritol, possibly raw cane sugar. 

Ingredients: 

  • 200 g of dark chocolate (min. 70% content of cocoa)
  • 1-2 tbsps. of unrefined coconut oil
  • Pre-processed (puffed, popping) buckwheat groats or puffed brown rice, quinoa, millet or amaranth
  • Add-ons to choose: I chose; I also recommend cinnamon, chili, ginger, lemon or orange zest, dried fruits of your choice, seeds, dried flower petals, candied fruits.

Preparation: 

In a pot, melt the coconut oil and add crushed chocolate – let it melt, but be careful not to burn it. 

When the chocolate is cooled down, add the pre-prepared buckwheat groats to obtain a thick but not too dry consistency. At this stage, you can also add spices. Mix thoroughly. 

Prepare a baking dish, preferably use silicone. Lay the add-ons at the bottom, then pour the chocolate mass and smooth it with a silicone spatula. Put in the fridge. 

When the chocolate congeals, put the dessert on the board and cut with a sharp knife into small bars. Store them in the fridge.

I'm interested in cutting oil. How would these work with no coconut oil?

The addition of oil makes the bars cut better, but you can not add oil in this recipe.
