Crispy Walnut And Pecan Cookies + Recipe

Hello dear Steemians!

Oh my !!!...sh$t happens and that is what I just had a couple of minutes ago. I had been trying to write the recipe for these cookies and I wanted to scroll to the top to check on the images…and it happened, I pushed the ENTER button erroneously instead of the going up-arrow. Well, here I am trying to finish the blog ASAP.

At any rate, I thought I would put-up some ingredients together and recreate cookies that I always bake. I have sort of recycled the recipe when I added new ingredients such as the pecan nuts, walnuts, cranberries and the ground almond. I used to bake this with lots of coconut flakes but I didn´t have it in my pantry so I added different
ingredients. I also topped these with icing sugar dissolved in the juice of lemon and it taste wonderfully good since the lemon added a kick on the taste on the rather boring oats. So without further ado, below is the recipe.

CRISPY WALNUT AND PECAN COOKIES

Ingredients: ( Makes 12 - 14 pieces )

150 grams rolled oats
150 grams ground almonds
1/2 cup sesame seeds
1/2 cup coarsely crushed pecan nuts
1/2 cup coarsely crushed walnuts
14 whole walnut for toppings
1 cup dried cranberries
3 tablespoons olive oil
150 gram sugar or sugar substitute powder Stevia
5 white eggs
3 tablespoons buttermilk
2 tablespoons sugar dissolved in 1/2 juice of lemon

Note: If you are avoiding sugar, the best thing to convert how many tablespoons of Steevia you need...you have to weigh 150 grams sugar in a scale...then measure how many tablespoons of sugar there are. You have to use the same quantity of stevia in terms of tablespoons because the ratio of sugar to Stevia powder should be 1:1.

Procedures:

Preheat the oven at 180°C.

1... Heat a pan with 3 tbsp cooking oil, roast the rolled oat, the ground almonds, sesame seeds, cranberries til
golden brown in color, add the nuts ...set aside.

2... Whisk the egg whites, add the buttermilk and using a mixer add the sugar by and by
until egg whites become stiff. Add this to the rolled oats and blend well til all oats are well
coated.

3... Using a spoon, scoop one at a time, between both palms, make a ball and then flatten each as in the above photo and place one by one on a baking pan lined with baking parchment. Top each cookie with a whole walnut. Bake in a preheated oven ( lower rack) under 180°C for about 15 minutes until the cookies are done. Spread a portion of the sugar lemon on top of the cookie using a pastry brush. Let stand for 10 minutes and th cookies are ready for serving.

The cookies can be frozen, too. It is practical to have them especially when friends make a surprise visit. The cookie jar above is one of three tin cans handed-down to me by hubby´s Oma and is vintage. The flower designed had been machine pressed so the flowers would poke out of the tin. I used this jar to store the cookies, after three days they become softer and taste better.
