Warabi mochi.

Today I made warabi mochi.
Warabi mochi is a jelly-like confection made from bracken starch and covered or dipped in soybean flour.
Ingredients;
- 100 g Bracken starch (I used tapioca starch, you can also use sweet potato starch or warabi starch)
- 100 g sugar
- 400 ml water
- Soybean flour
- Brown sugar syrup is what is originally used but you can also try something else (I used syrup from dates)
Picture instructions;
In a saucepan, mix the starch, sugar, and water.
Sprinkle some soybean flour on a baking sheet.
Heat the mixture until it starts to boil. Then reduce the heat.
Stir constantly until the mixture is thick and evenly translucent.
Transfer the mixture to a baking sheet that’s covered with soybean flour.
Sprinkle more soybean flour on top and let it cool in the refrigerator.
Once it’s cooled, take it out from the refrigerator and slice into pieces.
