Vegan kimchi.

Hello Steemit!

Today I made a lot of stuff ^^
I also made kimchi, for those who don't know what that is;
Kimchi is a traditional Korean side dish made from fermented vegetables.

It's not that hard to make, so I'm gonna show you guys how I made it (:

  • First the ingredients;
  • Chinese cabbage
  • Carrot
  • Green onion (scallion)
  • White onions
  • Garlic
  • Spicy paprika powder
  • Salt
  • For the sauce;
  • Dried shiitake
  • Dried seaweed
  • Soysauce (1 teaspoon)
  • Glutinous rice flour (2 tablespoons)

Instructions;

  • Cut your cabbage.
  • Put it in salty water.

  • Add the dried shiitake and seaweed in some water.
  • Cut the vegetables.

  • Mix the white onion and garlic together in a food processor.

  • Use the soaking water from the dried shittake and seaweed.

  • Add the soysauce and glutinous rice flour.
  • Put it in the microwave for two minutes, stir every minute a bit.

  • Add the onion and garlic mixture together with the vegetables.

  • Add the spicy paprika powder (or korean pepper flakes)

  • Mix it together, then add the sauce and mix it again.

  • Rinse out excess salt from the cabbage.

  • Stuff the cabbage with the vegetable-mixture.
  • Wrap up and place it in the bottom from your pot, make sure to squish it down.
  • Repeat till everything is in your pot.
  • When everything is inside, squish it a bit more.

  • Close the pot and keep it in a dark place for 24 to 48 hours.
    Alright, that's it! I will show you guys how it looks after 48 hours ^^

I have never eaten anything like this, but I am curious. I don't have a microwave though, how'd I do it instead?

I've never try to make myself as my first time I had kimchi was on an international flight dinner and it wasn't good at all sadly. So thanks to that, I never want to touch kimchi anymore 😅😅😅😅

I know it's supposedly healthy, maybe I should give it a try again.

I do like kimchi flavored ramen tho 😉

I also ate a bad one at a restaurant once, before I was vegan, but once you make it yourself ánd vegan it's always better! ^^

This was my favorite food when I lived in South Korea. Too bad most of the Kimchi where I live is not vegan or has added sugar. I really want to make my own this recipe looks great!

I LOVE kimchi! I've been thinking about making my own, but I've been buying it at an Asian market that makes great kimchi... however, they use fish sauce, which is delicious but I strive to remain plant based. That's the one thing I've been wondering about when I make my own: how to replace the fish sauce. You've got a good alternative here! Thanks!
