why goat cheese is so healthy?

Have you heard about the yörüks/yuruks; which is used to describe turkish nomads who lives on the mountain with their animals for whole of their life? In days of yore, a lot of turkish families were organizing their territory among their animals. They were living on mountains and carrying their tent/home(hand made ones) with them on mountains. nowadays there are some of them who still does it despite the modern life. We find one of them every autumn for delicious and healthy goat cheese. (to more information about yörüks: https://en.wikipedia.org/wiki/Yörüks)

Why goat cheese is so healthy?
Goats move a lot to find different kind of plants. You should see a goat while move on mountains. They can even climb surfaces like wall and they find real meals. you can not fool a goat by unnatural food. this is exactly what makes goats healthy. So if you find goat meat on a restaurant in turkey or some balkan countries don't think about it. you can be sure that's a healthy meat.

Lets talk about what we are doing with that goat cheese.
We are living in Muğla, Turkey. So we are going to Taurus mountains to find our cheese.
Goat milk is oily in spring. So if we make goat cheese in spring it will smash. It has different taste and delicious also but we are going to find our cheese to save for all year. So we are waiting for the end of the summer when the goat milk is less oily. Yörüks makes cheese by cooking on wood fire. They filter the milk by a fabric and while cooking they add salt and maya/ferment. After cooking a little more they took cheese particles and filter it's whole whey. It has to wait for a while then they put it in whey to protect.
At that time we are going to buy our cheese and at home we cut them all to small pieces and dip in salt all the pieces. If the salt isn't enough cheese spoils. If the salt is over we will have so hard cheese :) salt has to be "enough".
Than we put them in a glass jam. We have to wait for cheese to cook/sterilize with salt.
When it's ready eat it all the year. You don't need a fridge to save it.

How you can find and understand a real goat cheese;
It's hard to find them in standart markets. You can go to city bazaars or delicatessen in Turkey. Just say you want to try and smell it. You will feel difference between the other cheese' smell and goat cheese' smell. It's little bit heavy. Somebody doesn't like the smell somebody likes it so much. But everybody knows that it's different.
In Kos Island in Greece you can find goat cheese which is dipped in wine residue. It's hard to find it but if you go to Kos I suggest you to find it. It's also possible to find in other greek islands but Kos is the real dress.
