Should you not be careful to steam sterilise the jars first? For long term ambient storage of a food product, especially containing sugar, surely this is vital? Sounds delicious otherwise though

Lids too, anything in contact with the food or the marinade. I have never tried storing peppers in this way and it sounds delicious, I am definitely considering a go at this
