This is one of my favorite pasta and if you are a seafood lover hope you will love it too!Shrimp and zucchini are delicious combination in both pasta and risotto dishes, but I prefer it with pasta.The cherry tomatoes will add the little sweetness you need in this great combination.You can use any type of pasta, the one I used is one of my favorite. In this pasta recipe there is no sauce, but you can add white wine, if you like.I recommend you to buy small zucchini,ripe cherry tomatoes and very very fresh shrimps.
3 small zucchini or 1 big zucchini.
1 pound medium shrimps (which need to be peeled)
2 gloves garlic
1 Pint cherry tomatoes
Salt and Black Pepper
1 pound pasta
1/3 cup Olive Oil
How to make it
Add in a medium pan olive oil,garlic,zucchini,the shrimp and the cherry tomatoes, top with Salt&Black Pepper and the already chopped parsley.Cook covered on low to medium heat for like 15 minutes.After that stir gently, uncover and rise the heat a bit. Stir carefully until there is now liquid from the shrimp,the zucchini and the cherry tomatoes.Add the pasta to the mixture. .(It's a rule to add the pasta to the sauce, not vice versa!!!) Cook for more like 2-3 minutes over high heat, then serve and don't forget to enjoy it!
