Lotus Root Salad

Ingredients:
½ pound of fresh lotus root (available in Asian supermarket), peeled and thinly sliced
1 tablespoon rice vinegar
1 tablespoon sesame oil
½ tablespoon brown sugar
1 tablespoon salt
1 small scallion green, finely chopped
¼ thumb ginger, finely chopped
Directions
Peel the lotus root and thinly slice it. Then soak it in cold water for 3 minutes. Drain.
Next, bring a medium pot of salted water to a boil and add the lotus root to the boiling water and cook about 5 minutes until it turns semi-translucent. Drain.
Transfer lotus root to a large bowl. Drizzle with rice vinegar, sesame oil and add salt, brown sugar and ginger and whisk to combine. Scatter scallions and sprinkle sesame on top and serve.
