Perfect Summer Cake
Imagine...
Sunday afternoon... blue sky... warm sunshine... singing birds... lovely people around you... what is missing?
Yes, the perfect cake! Here it is:
Lemon Mascarpone Chocolate Drip Tarte with tasty berries on top
It is easy, fast and people will love it!
All you need is:
- biscuit cake either self made or bought
- blueberry and raspberry jam
- mixed berries
- 250 g couverture chocolate
For the cream:
- 400 ml whipped cream
- 3 packages whipping cream stiffener
- 500g mascarpone
- 2 teaspoon of lemon zest
- 4 teaspoons of lemon juice
- 100 - 150g powdered sugar (you can adjust this according your taste)
- some drops of vanilla flavour
Mix the ingredients. Put some blueberry and raspberry jam on each cake layer. Then fill the cake with the cream. Leave 1/3 of the cream to cover the whole cake. There are some great YouTube tutorials explaining how to do this.
Cover the cake with dripping chocolate and put some berries as decoration on top.
Ready!
Enjoy it with a hot cup of espresso.
