Hello, I hope you are well today, today I bring you a very delicious dish, Pork loin in sweet pepper sauce, I hope you are not going to burn my dear friend, and please if you are a farmer let the pig die happy ... well here are the following ingredients:

1-1 pork fillet of 1½ or 2 kilograms.

2.-6 cloves of garlic.

3.-500 grams of sweet peppers (of all colors).

4.-3 tablespoons of butter.

5.-3 tablespoons of sauce.

6.-1 tablespoon ground dried oregano.

7.- salt and pepper to taste.

8.-1 cup of grated paper.

9.-1/2 cup of oil.

10.- 2 cups of sweet red wine.

11.-3 bay leaves.

Well ... the preparation comes as follows:

The first thing we will do is dress the pork loin with crushed garlic, Worcestershire sauce, ground dried oregano, salt and pepper to taste. Let macerate overnight. Drain the dressings and brown on all sides in a cauldron with oil. We diced the sweet peppers. Sweat them in another pan with butter and crushed garlic. We add the dressing of the maceration to the sofrito. Melt the grated paper in a pot with oil, add the sweet wine and the sweet pepper sauce with garlic. Then the bay leaves. Let reduce until thick cover the pork tenderloin with the sauce. We cover with aluminum foil and bake for 40 minutes at 350 F. We serve hot cut on wheels accompanied with sweet potato or auyama puree and the sauce in a separate sauce boat so that everyone is served to their liking.
