West Java's Salad In Spicy Kaffir Lime Peanut Dressing.

I'm proudly introducing my home town's salad dish. It's slightly spicy with full of earthy flavors. Originally from Bandung, West Java call LOTEK and generally in Indonesia call PECEL.
Lotek can be cooked vegetables or can be raw vegetables just like salad and mostly served with rice cake and shrimp crackers. Mine is different vegetables and served with fried butterfly shrimps.

It's a little complicated to make the seasoning from scratch, but if you guys want to explore the taste of South Asia, then go grab some ingredients from Asian grocery stores. Or easier just buy the Peanut Salad Dressing/Sambal Pecel in the store or online.

Start to grind a big red chili (optional), Thai chili, garlic, dried or fresh sand ginger, kaffir lime or kaffir lime leaves, salt and sugar. If you use a kaffir lime, simply just squeeze the juice or grate the skin and add it into the seasonings.

In a bowl, mix the grinned seasoning and the main Ingredients, grinned roasted peanut. Then add tamarind juice (just sour enough only to get the flavor) along with regular drinking water to adjust the thickness. Vegetables can vary, you can choose as you desire.
Please do not mix it in a food processor, mix it in a bowl or otherwise it will turn into peanut butter.
