This burger should be good for those with diabetes because it does not use bread as the bun. The buns are from 100% egg whites instead. The whole burger itself is basically all protein. This can be the ultimate diabetic burger.

My own original recipe.
Prep Time: 20 minutes / Cook Time 25 minutes

Ingredients:

10 egg whites
Jalapeno Monterey Jack Cheese
15 cremini mushrooms - sliced
2 tomatoes - slice 1/2 inch thick
2 jumbo scallops - cut horizontally ( one for two burgers)
1/8 cup thousand island dressing
1/2 tbsp chopped fresh oregano
1 teaspoon garlic powder
black pepper and salt
2 tbsp olive oil
2 tbsp butter

Method:

Cut the jalapeno monterey jack cheese by half inch thick, then make a circle shape by using a circle mini cutter. You will need four 1/2 inch thick circular jalapeno monterey jack cheese.

Using a mini frying pan, cook the egg whites in low heat until they're firm (enough for four burgers, so it will be eight egg whites). Set aside.

Marinate the scallop with garlic powder, black pepper, a tbsp olive oil, fresh oregano, and pinch of salt.

Melt a tbsp of butter over medium heat and add the sliced mushrooms. Season with black pepper and pinch of salt, then cook until they're caramelized. Using the same pan, melt another tbsp of butter and fry the scallop until golden and flip to cook the other side. Place a slice of the jalapeno monterey jack cheese on top of the scallops, then turn off the heat when the scallop is cooked.

On a clean cutting board, place the fried egg white as a burger bun and spread with the thousand island dressing then place some of the cooked mushrooms, sliced tomato, and cooked scallop on top, then place another egg white as the top bun. Garnish with fresh oregano on top. Serve with fried sweet potato and sliced tomatoes. Folks with diabetes can remove or decrease the portions of the sweet potatoes.
