Chicken Braised Artichoke With Spinach And Basil

It's the best pair of harmony when we cook artichoke and spinach together, with dried basil and fresh basil such a good hint for additional earthy flavor to my braised chicken. The savory taste that I can't even explain, it's beyond delicious.

Ingredients you needs:

Boneless chicken (cut), spinach, 3 to 4 fresh artichoke (clean and cut), garlic powder,1 tbsp of whole Dijon mustard ,salt, pepper, dried basil, dried oregano, handful of fresh basil, chicken broth or regular water and 1.5 teaspoon of grill seasoning

I actually don't use ready to use seasoning, but this one I love it because of rich in herbs and earthy flavors. It's optional, you can just skip it and still get intensity of flavors from dried oregano and fresh basil.

Here how to make it:

3 to 4 medium artichoke, clean and soak in salt water then stir fry with some garlic and salt. Use a food processor to blend the cooked artichoke and set aside.

Saute chopped onion in olive oil until tender, add chicken and cook both sides to get a nice brown color then add chicken broth or regular water. Simmer until it's cook in salt, pepper, dried basil, dried oregano, a tbsp of dried grill seasoning and garlic powder.

Add the spinach, fresh basil and blended artichoke at the end. Serve with some sprinkles of cooked mushroom and a little bit of grated cheese.
