Today is one scorching day at 95 degrees F. I was in the mood for something cold and slightly sweet so I decided to make a nice cream parfait. I made a chia seed pudding with oat milk and dunaliella salina to go along with my nice cream. Dunaliella salina is an algae that grows in salt water areas and is high in carotenoids. The orange color is extremely intense so it's a nice way to naturally color foods while getting the antioxidant benefits from eating it.

Chia Seed Pudding

serves 2

• 1 cup unsweetened oat milk or any non diary milk
• 3 1/2 tbsp chia seeds
• 1 tsp dunaliella salina (optional)
• 1/2 tsp vanilla extract
• pinch of salt
  Blend the oat milk with dunaliella salina, vanilla extract and a pinch of salt. Pour the oat milk into a small bowl and whisk in the chia seeds. Occasionally whisk the chia seeds in the oat milk so the seeds do not clump in the bottom of the bowl. Leave in the refrigerator for a couple of hours to thicken. You can make this the night before.

Passion Fruit Raspberry Nice Cream

serves 2

• 1 large banana, peeled, chopped into small pieces and frozen overnight
• 1/4 cup raspberries, frozen
• 2 tbsp passion fruit puree
• 2 tbsp unsweetened oat milk

Place all the ingredients into a blender and blend until smooth. Top the chia seed pudding with the nice cream and serve with your favorite fruit. This parfait is creamy and tangy, perfect for cooling off in this summer heat.
