Chai Spiced Overnight Oats ( Vegan and Sugar Free)

I've always read about overnight oats and my friends tell me it's super simple and nothing beats waking up to a breakfast that is ready to go. I wanted to try this recipe and I usually enjoy drinking a cup of Chai with my breakfast so I thought why not combine the two? If you prefer your oatmeal without the Chai tea, just replace the amount of tea with your choice of non dairy milk.

Chai Spiced Overnight Oats

serves 2

  • 60g Old Fashioned rolled oats
  • 120g Oat Milk or any non dairy milk of choice
  • 120g brewed unsweetened Chai spiced tea
  • 2 tbsp chia seeds
  • pinch of salt (pinch of salt)
  • splash vanilla extract (optional)

Combine all the ingredients together and place in the refrigerator overnight. The oats and chia seeds will soak up the excess milk. In the morning, if you find the oatmeal to be too thick, you can add some milk to thin it out. I tend to like to my oatmeal on the thicker side. Top your oatmeal with your favorite fruit, nuts and or seeds. Serve with a side of maple syrup for an added touch of sweetness.

One bite of this oatmeal and it reminded me the flavors of fall. The Chai tea added a hind of spice, the figs and pear added some sweetness. The hazelnut and unsweetened coconut gave some crunch to the oatmeal. This oatmeal recipe is fast to put together, easy and super versatile. The combinations of flavors are endless. You can serve it warm or cold and if you are pressed for time in the morning, the night before, you can combine your fruits with the oats and place your crunchy mix ins into a small plastic bag so everything is ready. This is my new favorite breakfast!
