I killed 3 starters so far... I'm working on one now and so far it's doing ok. The test will be when I get to bake again.

But back to your post, we had to lots of trial and error to have sourdough and sourdough bread. It's continuous learning. I didn't experience the acetone smell point though. But now I know about it after reading your post... gosh, so much to learn...
