Keto Pizza Topped with Magnificent Marinara, Pepperoni, and Bacon!

The crust:

2 cups of shredded cauliflower

2 whole eggs

2 tablespoons of softened cream cheese

2 tablespoons of Italian seasoning

1 teaspoon of pink salt or sea salt

6 tablespoons of fresh shredded parmesan cheese

Mix all contents in a bowl with your hands. (Can get messy but man up!)

Lastly, mix 1 ½ cup of mozzarella cheese with 1 ½ cup of shredded white cheddar cheese in a medium sauce pan on medium heat until the cheese is fully until melted.

Next, mix the melted cheese in with the mixture of cauliflower, eggs, cream cheese, Italian seasoning, salt, and parmesan cheese to hold it all together.

Again, mix entire content in a bowl and spread evenly over a pizza pan.

The is copper pizza set you want. It has been a god send for this recipe. I highly recommend it! No dough sticks and it's easy to clean!

Set the oven on broil and slide in your prepared pizza crust dough. Cook top side of the crust until slightly well done. Keep a close eye on this process, as it cooks very fast and can quickly burn. Once first side is done, use a not stick pizza cooking screen or parchment paper to flip the cooked side of the crust to lightly cook the other side until its nice and baked.

The Magnificent Marinara Sauce:

2 Tomatoes

2 Tablespoons of tomato paste

2 garlic cloves minced

1 Teaspoon of Italian seasoning

4 Tablespoons of fresh chopped parsley

1 Teaspoon of pink Himalayan salt or sea salt.

¼ Teaspoon of pepper

Mix tomatoes. Tomato paste, garlic Italian seasoning, parsley, salt, and parsley in a blender, preferably in a Ninja. Blend all ingredients until pureed. Next, heat 6 tablespoons of olive oil in a skillet on medium heat and sauté 1/3 cup of diced white onions with the oil until softened. Then slowly mix in marinara in the skillet stir and allow to cook for 2-5 minutes. Finally, add ½ cup of white wine in the mixture, stir frequently. Once the marinara is brought to slight boil, simmer to low heat and you are done with the magnificent marinara.

The Toppings

Hormel peperoni or from the deli, your choice.

Cook in a bacon a skillet and set aside on a plate and break up into pieces for the topping.

Putting It All Together:

Spread evenly the magnificent marinara sauce to about a quarter inch from the edge of the crust

Sprinkle a half cup of mozzarella cheese over the sauce.

Cover pie with peperoni about a half inch between pieces over the cheese and sauce.

Top bacon over the pepperoni.

Sprinkle another half a cup of mozzarella over toppings again. (Cheese may not look like a lot, but once it melted, it will be plenty. Remember the crust itself is made mostly of cheese)

Finally, slide the finished pizza in a 400 degree oven for about 15 minutes, and you are done with another Keto friendly masterpiece!
