Veggie Christmas Roast Sandwich! The ultimate 'leftovers' snack 🌲🥪
So Christmas has been and gone now, but the inevitable leftovers from the feast remain!
Shops and supermarkets in the UK stock Christmas sandwiches from as early as November, but alas never a vegetarian option in sight! So of course, I had to make my own version to make good use of all the leftover veggie ingredients 😊
On Christmas Day I did not miss out on anything being vegetarian, I had all of the trimmings and even made my own 'pigs in blankets' using veggie bacon and chipolatas! (There weren't any leftovers of these otherwise I would've added them to the sandwich!) The Quorn roast I made was excellent and being the only veggie in the family meant there was plenty left to get creative with.
So here's what you'll need for the ultimate post- Christmas sandwich:
- Leftover Quorn roast/ any other chicken alternative
- 1 ball of leftover stuffing ( I used sage & onion)
- 2 slices of bread
- 100ml onion gravy
- 2 Tbsp cranberry sauce
Method:
Butter 2 slices of bread (optional).
Carve your roast into thin slices and cut stuffing into small pieces.
- Spread the 'chicken' over one piece of bread and the stuffing over another.
- Prepare 100ml of instant gravy.
Spoon an even amount of cranberry over the 'chicken' side.
Drizzle a small amount of gravy over the stuffing, just enough to moisten it, you don't want the bread or filling to become too sloppy!
- Put sandwich together, cut in half and enjoy..
There you go, the perfect recipe to make good use of all those bits left over after the festive period and super yummy!
You could even add some veggie bacon or sausage if you want to supersize your Christmas Sandwich 😋

We had our own "veggie" leftovers sandwich this Christmas. It had tofurkey, broccoli, kalettes, lettuce and cucumber with some garlic vegan cream cheese. The textures hit the spot, don't think many people I know will appreciate the concoction but it was damn tasty!
